The venue, based at the old Halo Bar premises at Northminster, will bring the best Stateside foods to Peterborough City Centre by day, and promises themed nights and live music by night.
The venue is hosting a soft launch tomorrow evening (Friday) for friends and family, before opening to the public on Saturday evening.
Co-owner John Walker - a life-long Peterborian, who was born just 300 yards from the venue itself - said: "We really hope that the people of Peterborough will come out and support us; there's nothing else like this in the city.
"We'll obviously be opening on Saturday night for reservation only, and we'll be releasing the number on our web page shortly where you can ring to get a table.
"We think with social distancing we can allow 140-150 people in - we've created a lot of space in the building to make sure we're Covid-free and that everyone is segregated safely.
"This concept is something that I have been working on for a while, and I believe it will work well for the people here. It's a good location on the corner - and now we've altered the building to allow the windows open to allow air circulate."
