Tacos and Flip-flops is now based at the Hackspace in Enterprise Way, and is keeping everyone in the centre and beyond well-fed with some spicy offerings.

The duo are ably accompanied by their dog Rudy as they serve up burritos, quesadillas, nachos, and more, with 'Philly cheese 'steak' and agado among the taco treats.

Lynn said: "We loved Mexico and fell in love with the street food - the freshness of it, the way people gather around the hot plate.

"It was a nightmare to get vegan food there, but I loved it when I did - it's just unpretentious, good food."

The duo set up in 2019 and started with a pop-up kitchen at the Black Horse in Nassington, enjoyed by more than 100 people.

With regular spots in the beer garden at the Ostrich and a host of festival and event slots booked it seemed they were set up for 2020 - before you-know-what struck.

But after a tricky couple of years the flip-flops are well and truly back on the feet; on the day PM calls the duo are preparing for a private event for 100 people, and are embarking on seitan cooking classes across a series of weekends into March, to be followed by a series of Spanish language meet-ups.

They have around 2,000 followers on Facebook and Lynn said: "We went to the Hackspace at the end of last year to talk to them about their drink and draw nights, and when February is over it will be our first full month here.

"Since we started in 2019 we have seen a complete difference in people's mindsets when it comes to vegan food. When we were open at the Ostrich many didn't know it was even vegan food, or did and just kept coming back anyway.

"It is important to me that I am vegan, but we would rather push what we make as good Mexican/South American street food - that just happens to be vegan."
